Casey Lyons’ creativity seems boundless. He carries himself with a vibe that is equal parts P. T. Barnum and Jeff Spicoli as he drives the cocktail menu at Kimpton Shorebreak Resort in Huntington Beach, California. Hospitality is a passion that keeps him up at night—literally, thanks to a popular drink he named after the 1996 Robert Rodriguez/Quentin Tarantino film From Dusk Till Dawn. The movie culminates in a blood bath as hardened criminals face off with a bar full of vampires, but the drink has a much more palate-pleasing ending.
Since he started in the F&B trade at 19, at a pizza place in Phoenix, Lyons has had a restless desire to deliver memorable F&B experiences with a little entertainment. “I started in the back making pizzas,” he says. “Once I started coming out of my shell a little bit, they kicked me out onto the service floor, and I’ve never looked back. There’s something about getting out of the inside of my head and getting in front of people. It’s an addicting lifestyle.”
