2019 Fruit Pairings kick off with authentic recipes from China, Thailand and the Philippines.
To mark the launch of its 2019 Fruit Pairings program, Dole Packaged Foods, LLC is taking operators on a culinary journey with memorable recipes inspired by the authentic street food of Asia. What sets this program apart is a flavor-driven attention to detail and regionality. For example, Chinese flavor inspiration will come from the Guangdong province, Thai recipes will originate from Isan cuisine and recipes from the Ilocos region will be used to demonstrate the culinary heritage of the Philippines. CHINA: GUANGDONG PROVINCE
The Cantonese cuisine of Guangdong on China's southern border features subtle flavors and touches of sweetness. It’s the home of dim sum and such iconic dishes as char siu pork and clay pot rice. Techniques like roasting and steaming are common—featured in our Peach-Hoisin Duck Dim Sum recipe.

THAILAND: ISAN REGION
The northeastern region of Isan is known as the heart of Thai cooking. Spicy yet simple, the rich flavors of the region are showcased through meals eaten family style. Dishes like this Mango Yam Som-O are full of tongue-tingling chilies, pungent fish sauce and bright, sour pops of flavor.

THE PHILIPPINES: ILOCOS REGION
Along the northwest coast of the Philippines, Ilocano cuisine showcases island flavors through local ingredients like produce and seafood. Ube, or purple yam, is a root vegetable commonly used in Filipino cuisine, including a popular dessert called Halo-Halo.
