Kimpton's Gray Hotel Partners with Michelin-Rated Brewpub for Holiday Craft Beer
Chicago's renowned Band of Bohemia creates limited-edition brew for Gray guests.
This holiday season, The Gray Hotel in downtown Chicago debuts an exclusive partnership with Band of Bohemia and their collaboration holiday beer, Trigo de Navidad, available at the property's Boleo rooftop restaurant and bar, Vol. 39 lounge, and The Gray’s wine hour (a Kimpton brand initiative, complimentary for hotel guests).
Trigo de Navidad is a holiday wheat ale, which Band of Bohemia describes as an offering to Zaramama, the Goddess of Earth and grains. Blending malted barley, wheat, and Patagonian malts, the beer is reminiscent of those found in Argentina and throughout South America, perfect for the hotel’s all-season rooftop, Boleo, which celebrates the dramatic flavors and sultry beats of the region. When embarking on the collaboration, the teams at Band of Bohemia and The Gray felt it was important to consider hospitality and a sense of place, ultimately landing on a combination that brings together Band of Bohemia’s somewhat funky electricity with The Gray’s downtown Chicago elegance to create a beer that has both characteristics in mind. The result? A winter wheat with a delicate aroma of lemon zest, earthy celery seeds, and a hint of cloves to round out this golden beauty.
