La Cantera's Sire Bar Rolling Out Exclusive Barrels Of Whiskey
Resort will feature its own single-barrel whiskeys from Kentucky, Vermont.
Sire Bar has introduced a unique new way to bring the spirit of the King Ranch to La Cantera Resort & Spa in San Antonio, a Destination Hotels property, courtesy of tradition-rich Kentucky and Vermont distilleries.
With more than 200 whiskeys from distilleries spanning the globe from Kentucky to Japan, Sire Bar already boasts a curated bourbon program. Now, Sire is serving single barrel-bourbon whiskey bottled exclusively for La Cantera.
The Buffalo Trace distillery in Frankfort, Kentucky; Wild Turkey in Lawrenceburg, Kentucky; and the WhistlePig Straight Rye distillery in Shoreham, Vermont are among the names providing single-barrel bourbon to Sire Bar.
Sometimes called single-cask bourbon, single-barrel bourbon is a higher grade of whiskey that comes from an individual aging barrel, making the spirit derived from it a one-of-a-kind tasting experience. Resort Beverage Manager Chris Caldwell traveled to whiskey country last year to tour these famed distilleries.
“We identified distilleries that share the common values of the King Ranch horse breeding program: innovation and the pursuit of excellence,” said Chris Caldwell, resort beverage manager, whose team is developing the La Cantera Resort & Spa reserve program. “We were fortunate to go behind the scenes inside of the aging rickhouses (storage space for whiskey barrels) and hand-select what we feel, will become, our Triple Crown winners.”
The first barrel to arrive at Sire was the Weller Old Antique 107 from Buffalo Trace. Whiskey from this barrel is almost gone, but arriving later this month (November) will be bottles of a single barrel, 13-year-old, 109.3-proof rye from WhistlePig featuring a blend of sauternes, madeira, and port casks. Caldwell describes it as “cinnamon-forward, thick with caramel coating, full-bodied with notes of vanilla baking spices and a little maple. It will be awesome for fall.”
Caldwell expects single-barrel whiskey by the end of the year from Waco, Texas-based Balcones Distilling. Then come the new year, Sire will welcome bourbon from Wild Turkey, selected from private barrels of multi-generation masters Jimmy and Eddie Russell, and another single-barrel reserve from Buffalo Trace.
Spirits served at Sire and all La Cantera Resort & Spa bars are selected based on rigorous process.
“Our selection comes from competitive tasting of the potential product against one of our go-to whiskies in the same style,” Caldwell says. “We take comparative notes in terms of quality, region, price point, and if we feel there is an opportunity to add more depth in that category and stands up to a quality taste we will bring new products. The first step is our team selling it and getting the customer feedback, and ultimately if they like the brand and product, we keep it around.”
