Recipe: Rosé All-Day Flamingo

The Nest at Thompson Seattle is one of 14 rooftop venues under Two Roads Hospitality, which encompasses the Thompson, Joie de Vivre, Destination, tommie, and Alila brands, along with non-branded properties such as the Chicago Athletic Association. While the view from each Two Roads rooftop is memorable, it’s the quality of the F&B that brings guests back (see our pictorial on page 8), including this group cocktail at The Nest, served in a large copper flamingo and ladled into glasses. This recipe serves six, and was co-created by Nest GM Matt Martelli and Lead Bartender Josh Haddock, who each are holding a flamingo on our cover.
Rosé All-Day Flamingo
From the Bar of: Thompson Seattle
• 2 oz. lime juice
• 4 oz. Beefeater 24
• 4 oz. Absolut Elyx
• 8 oz. Cocchi Americano
• 375 ml brut sparkling rosé
• 1 each marigold flower
Combine the Absolut Elyx, Beefeater 24, Cocchi Americano, and lime juice into a shaker. Shake over ice and strain into a flamingo. Top with sparkling rosé. Pour each individual serving from the Flamingo into a coupe. Garnish with a marigold flower.
