night for preparing breakfast, lunch, dinner,
banquets, and 24-hour room service.
“Over the course of the day, I think it’s
out more than it’s put away,” Chef Seth
Greenberg says. “Our salad dressings are
made in it, plus our aiolis, mayonnaise,
and pâtés.”
In the mornings, Chef Greenberg’s
kitchen has the machine’s continuous feed
attachment handy for shredding cheese
and potatoes for omelettes. “[Robot
Coupe] is the most versatile, the most durable, and the most
powerful; they really are the benchmark,” Greenberg says.
While Chef Greenberg has much to say on the subject of Robot
Coupe’s food processors, he can’t really
comment on the company’s customer
service. “I haven’t had any problems with
Robot Coupe, so I’ve never had to call
them,” he admits. But Greenberg raves
about Robot Coupe’s performance. “I’ve
worked in a dozen restaurants, and I’ve
never worked in a kitchen that didn’t have
a Robot Coupe,” he says. “It’s the equivalent
of the Cuisinart at home, but tougher,
and it will last 10 or 15 years.” —JM
