Chef Leif Benson, newly retired after 31 years at
Timberline Lodge on Mount Hood, was honored
as this year’s Oregon Department of Agriculture
Chef of the Year. Until recently, Chef Benson has
overseen all food and beverage at the Lodge,
serving more than 2 million diners a year in the
resort’s fi ve outlets. Consequently, he needed
his kitchen to be as streamlined as possible, and
Plate-Mate’s vertical stacking racks helped him
achieve that goal.
“When you have limited square footage, it really
makes a difference,” Benson says, noting that
his staff would frequently use the plate stacking
system for prepping amuse-bouches. Since
the racks are on wheels, they are also useful in
banquet settings where dishes can be plated then
wheeled en masse into the walk-in refrigerator.
Chef Benson adds that he frequently used
vertical presentations and took advantage of
Plate-Mate’s option to stack every other plate,
leaving more room for tall dishes. Additionally, all
Plate-Mate models are designed with adjustable
arms to allow plates, dishes, or trays of varying
shapes and sizes to be quickly, simply, and
securely stored and removed.
And the racks are durable. “I had the same
Plate-Mate unit for eight years,” says Chef Benson,
adding that he only needed to make minor
part replacements, at minimal cost and hassle.
“Within a few minutes, I can repair or replace a
part. That’s extremely handy.” —JM
