At the recent National Restaurant Association Show, HOTEL F&B shot
a video demonstration of Hobart’s new Advansys Ventless Door-Type
Warewasher. This is the first of its kind in energy recovery capabilities,
using a condensing cycle that captures steam to pre-heat inlet
water from a cold line, eliminating the need for a ventilation hood. This
patent-pending ENERGY STAR-qualified warewasher not only cleans
and sanitizes dishware and heavily soiled pots and pans, it can also
save money. Using only 0.74 gallons of water per rack, it can reduce
costs by more than $5,000 in the first year and upwards of $1,500 each
subsequent year in energy recovery, reduced HVAC use, and the elimination
of vent hood and fan installation.
