Kimpton Hotels and Restaurants has selected Kold-Draft to
supply the ice machines for all of its new builds, and two San
Francisco restaurants were first in line. The Grand Café at the
Hotel Monaco and Fifth Floor restaurant at the Hotel Palomar
now feature the machine that makes “the complete, perfect,
square cube,” describes David O’Malley, VP of Kimpton’s West
Coast operations.
As the decision-maker for the brand’s
beverage programs, O’Malley has heard from
bar aficionados and Kimpton mixologists
about the emphasis people place on their
cocktails and the importance of the ice.
Kold-Draft offers “a pure ice with very
little trace of dissolved solids; it holds its
form all the way through the enjoyment of
the cocktail,” O’Malley says.
“We want to keep the drink proportionate–the way it was
intended,” he adds. “The large cubes also provide a great visual.”
Kold-Draft machines feature a special horizontal evaporator
ice-making system that produces pure ice that cools faster and
melts slower. The ice is available in full cubes,
half cubes, or cubelets.
O’Malley says bar staff at the two San
Francisco restaurants appreciate dealing with
such a quality product. “They feel that they
are on the forefront of what is happening in
the cocktail world,” he says. “And because
Kold-Draft is an American business, we are
