Vita-Mix Commercial Blenders At the W Chicago Lakeshore Hotel, Executive Chef Kristine Subido’s menu of sharing plates is inspired by the cuisines of the Southern Mediterranean. A favorite on the menu is Subido’s flavorful hummus—blended to smooth perfection by her kitchen’s Vita-Mix blenders. “It produces really delicate purées that are silky,” says Subido, who has responsibility for the hotel’s entire food and beverage operation.

Vita-Mix blenders are multi-purpose tools, says Subido. She also uses them for milkshakes, soups, salad dressings, and desserts. Known for her creative use of spices, the Philippines-born Subido can also rely on Vita-Mix to grind those spices to perfection. “A Vita-Mix blender really is a must-have tool for any hotel kitchen,” she says.

The versatility of the Vita-Mix blenders combines with plenty of power to get the job done (although it’s not one of those “super-loud” blenders, Subido adds). “Because of the amount of air it incorporates, it’s healthier than using a typical blender,” says the forward-thinking chef. She recommends not just cutting the oil or butter used, but even omitting it completely. “You’ll still get that silky texture.” —JT
