Porcelain platters make for elegant serveware, until they get chipped or broken, that is. Patrick Augustyn, executive chef
at the Embassy Suites New York City, has found a way around this conundrum. He uses 80 percent melamine pieces by
Europaeus that can handle a fall without being destroyed. “I use a variety of melamine ware, mostly white and black,” Augustyn says. “I am a long-time user. Melamine is a home run.”
