“We call them salad trees,” says Jeff Post, VP of Martin’s Caterers in Baltimore, Maryland. “We first saw them in 1995 at the National Restaurant Association show in Chicago, and we bought 12 Plate-Mate 60-plate mobile racks that day. Those 12 turned into 100 for us.”
With seven catering facilities in the Baltimore-Washington, D.C. metro area, Martin’s Caterers serves over a million meals annually. “With so many large functions and up to six simultaneous events, Plate-Mate enables greater efficiencies in our banquet operations,” says Post. “We use them to plate up salads and desserts.”
The Plate-Mate trolleys, available in sizes ranging from 48 to 168 plates, “hold a lot more than racks with sheet pans and are easier to work with because you don’t have to pull out a tray,” Post says. “And they have a nicer appearance, take up less space, and are virtually maintenance-free.
“We’ve looked at the other plate racks now on the market,” Post adds, “and we still think Plate-Mate is the best one made. It’s much more versatile, and the company really stands behind their products.” –ADK
