At the Hilton Chicago, occupying an entire city block of prime real estate, space is at a premium. Nowhere is this more true than in the bustling kitchens of the downtown landmark, which is why a system that is simple to install and maintain and that increased storage capacity by 30 to 40 percent was a guaranteed hit at the 1,544-room luxury hotel.
“It all just snaps together,” says the hotel’s longtime operating engineer, Jim Mundo, referring to Cambro’s high-density Camshelving. A few taps from a simple rubber mallet, and the shelving is in place. No bolts. No drilling. And leveling off of the continuous free-standing units to account for tile or otherwise uneven floors is just as easy, courtesy of the plastic wrench supplied by Cambro. “It’s rock solid and practically maintenance-free,” says Mundo, of the easy-toclean food-grade system that he has installed throughout the hotel’s main kitchen, storeroom, and walk-in coolers. “They’re durable and hold a lot of weight,” he adds. “You don’t have to worry about anything breaking.”
Camshelving has been in place for three years at the Hilton Chicago, and Mundo is as satisfied with Cambro’s customer service response time as with the product itself. “I’d recommend them to anybody,” says the native Chicagoan. “They stand behind their product.” –JT
