From cipollini onions to grilled artichokes to consommés, and from premium chocolates to isomalt to crème brûlée mix, the range of products from Swiss Chalet Fine Foods that Chef Bob Axenfeld uses at his hotel is very broad.
As executive chef at the Hyatt Regency Bonaventure Conference Center & Spa in Weston, Florida, Axenfeld says he has enjoyed using Swiss Chalet products for well over 10 years.
“With seven outlets, plus banquets, there’s always a need for something. We use Haco-Swiss seasonings, [Boyajian] oils, [Doktorenhof] vinegars, and some of their savory items, including the mushroom-truffle reduction. Their consommés are very convenient. They’re very pure; there’s no MSG or chemicals. Overall, Swiss Chalet products have great consistency and are of high quality.”
Chef Axenfeld is equally generous in his praise of the company. “They’re a joy to work with. When I call, I get an immediate response and often a visit from their corporate chef. Most of their products are available right away. We get next-day or even same-day delivery of many items.”
For Chef Axenfeld, the proximity of the Hyatt Bonaventure to Swiss Chalet’s corporate headquarters in Miami is a plus. “It’s an ideal situation for us here in Southern Florida. Klaus Mueller [Swiss Chalet corporate executive chef] is just down the street. He’s always willing to work with a customer or introduce a new product. And their seminars are terrific.
