Many chefs are passionate about food. Greg Cole, chef-owner of Cole’s Chop House and Celadon in Napa, California, is also passionate about water.
“I use Nestlé Waters because I like them the best,” he says. “I often use the Acqua Panna, a bottled still water, when I’m doing wine tastings. The taste is so clean and pure. It has a nice weight to it. I really like its flavor profile—or the lack thereof. It doesn’t leave any lingering mineral aftertaste.
“Along with the Panna, one of my favorites is S. Pellegrino,” Chef Cole adds. The Pellegrino is carbonated, more refreshing and effervescent. I drink it for lunch instead of tea or soda. It’s spicy, with some minerality to it. We tried another sparkling water for the restaurants that was a bit cheaper, but the taste was horrible.
“Like the wines I pick, I’m looking for the best available water that’s out there,” Cole continues. “Both of my restaurants have charcoal filtration systems, so our tap water is pretty good. But we want to offer another choice for our customers, something that’s better than plain tap water. We’re also conscious of the environment. The two waters we offer come in glass, and we return every bottle for recycling. So we’re not creating an ecological mess, and the water tastes great.”–ADK
