The Marriott Marquis in New York books over $50 million in banquets each year, according to Joseph Cozza, executive director of catering. To accommodate the diverse tastes of so many clients, Cozza serves Boisset America Sparkling Wines. Charles de Fere Brut Tradition is the Marriott Marquis' banquet bubbly, selling 200 to 300 cases each year.
The Brut Tradition is just one of six on the Charles de Fere imported French sparkling wine repertoire, which offers selections for all tastes, including: Cremant de Bourgogne AOC Brut Grand Cuvee, delicate with hints of vanilla; Merlot-Gamay Reserve, fruity with a touch of licorice flavor; Brut, Blanc de Blanc Reserve, with ripe apple, spice, and butter flavors; Jean-Louis Brut & Blanc de Blanc, fruity with a light, crispy taste; and finally, Rose, forward and fruity with an orange-pink tint.
The Marriott Marquis' banquet choice, Brut Tradition, is 100 percent Chardonnay and touted by Boisset America as a "wonderfully harmonious wine," a statement with which the chef at the Marriott Marquis apparently agrees.
"Our chef is happy with the way it pairs with his creations," attests Cozza, and Cozza himself is happy because Brut Tradition "is a great value, and the quality is unquestionable." --ABA, KB
