The California Chicken Chipotle Omelet is the best-selling omelet on the breakfast menu at JB's Family Restaurants, which may surprise some given chipotle's reputation for heat.
But what TABASCO brand Chipotle Pepper Sauce brings to the table is great flavor, not hotness, says Terry Hornbaker, JB's VP for F&B. In addition to flavor and body, this R&D chef appreciates the sauce's operational ease.
"It's in its natural form in the bottle," Hornbaker says. "If sauce comes in concentrate, it must be diluted. If it comes in bags, they can break."
TABASCO brand sauces also grace JB's tables. Guests appreciate using familiar brand name products, Hornbaker adds.
Thomas Wolfe, chef proprietor, Wolfe's of New Orleans, only uses TABASCO brand Garlic Pepper Sauce in his Green Onion and Roasted Garlic Hollandaise Sauce that accompanies his Smoked Mushroom Parma Prosciutto Frittata. He says hollandaise can be tangy because of the vinegar component, but TABASCO brand has "a natural flavor to complement the sauce, giving me more leeway with how to use other ingredients."
Wolfe suggests serving TABASCO brand sauces with this dish, showcased on his brunchstyle menu.
