Designer Jana Stern showed us the latest in uniform design and fabrics. Trendy items include a little black dress in lycra/spandex that’s selling in the Beverly Hills Hotel and also going into Wolfgang Puck’s at L.A. Live. “It’s made of super performance plus comfort fabric that professional dancers wear,” says Stern. We also saw an example of the “REI look” with moisture management material that chefs are increasingly choosing. Another highlight was a cute brown uniform with hip low-waisted pants and coordinating tie. Finally, a new tunic worn at the Fairmont San Francisco that’s black with red and white piping. It has polyester for durability and fade-resistance, rayon for nice look and drape, and a touch of spandex for comfort and give.

3. SKECHERS
Work out while you work.

Skechers showcased their new Shape Ups shoes at NRA, aiming to give foodservice professionals some exercise while on the clock. It features a special sole that constantly causes the wearer to find their balance and improve their posture, similar to walking on sand. “We made it with a non-slip outsole that can be worn in the workplace. Instead of someone taking a multi-mile walk to get their exercise, they can just do it in their normal work routine,” says Larry Dula, national sales manager for Skechers. Shape Ups are currently available in Mary Jane and lace-up styles.

5. CROCS
New women’s styles for the front of the house.

Crocs may be best known as Chef Mario Batali’s brand of choice, but the company is making a decidedly female-friendly push with four new styles rolling out through 2010. We saw a sneak peek of each shoe when we stopped by the Crocs booth and learned the Melrose and Juniper styles will be available this November, while the Rosemary and Lavender styles will be ready by spring 2010. “All of these are available for the front of the house,” says Dani Cordsen of Crocs. All four styles feature the patented Crocs Lock slip-resistant tread.
