LantmÄnnen Unibake Sets up shop in the U.S.
Not long ago, “about the only bread readily available in South Florida was Wonder Bread,” says Ralph Hoffmann, Lantmännen Unibake’s director of national accounts. In recent years, several things changed, including the traveling American public who, as they experience good bread, want it to be accessible.

Lantmännen Unibake is a division of a Swedish-based farmers’ co-op, with more than half the company’s business within hotels. When it acquired Florida-based Euro-Bake in April, the demand [for good bread] was already established.

“It was getting more difficult to export to the United States because the FDA is putting more containers on hold,” says Scott Kolinski, president of Lantmännen Unibake U.S.A.

“Being established here brings jobs to the community, lets us control fuel costs, and gives us the flexibility to more easily create regional flavors like the all-time favorites, cheese and cherry Danish,” Kolinski says.

“The company now offers Danish, croissants, and artisan breads,” says Hoffman. “New flavors include three-cheese ciabatta, Hawaiian pineapple, and muesli cranberry. In the United States, the preference is for more flavorful pastries, the best seller being maple pecan, using real maple syrup from New England, pecans from Georgia, raspberries from Belgium, and apples from the U.K.” These all-natural, trans-fat-free products use no preservatives or dough extenders.

Share Our Strength’s Chefs on Bikes, designed to raise funds to end childhood hunger in America, took place on June 24, 2008. This date marks the five-year anniversary of this award-winning fundraising motorcycle rally for chefs and culinary professionals throughout the Mid-Atlantic. With Fortessa supplying tableware and Schott Zwiesel stemware for the dining/tasting events, the Pebble Beach Food and Wine Fest made its debut with a four-day epicurean event that gathered a galaxy of culinary stars. Notables such as Thomas Keller, Charlie Trotter, Jacques Pepin, and Michel Richard presented a series of meals and cooking demonstrations, and winemakers from around the world led tastings, seminars, and a rare-wine auction. For the premiere, event producers asked Fortessa to create a commemorative gift plate inscribed with the Pebble Beach Food & Wine Festival logo. Jack DeSaussure, a fourth-generation owner actively involved in family-owned Maywood Furniture Corporation, has assumed the position of operations manager. California School of Culinary Arts student Kristianne Pak was announced the winner of the 2008 S.Pellegrino™ Almost Famous Chef Competition. Pak was chosen by an elite judging panel that included Chef Christoph Leu of Starwood Hotels and Resorts, Chef Matthew Levin of Lacroix at the Rittenhouse, Chef Allyson Thurber of the Lobster, Chef Tony Mantuano of Spiaggia, Tara de Lis of Citysearch, Jeff Hoyt of Gayot, Lena Birnbaum of Bon Appétit, and Rita DeMontis of Toronto Sun. Pak was awarded prizes including $10,000 cash, a $1,000 scholarship for her school, a year-long opportunity to work with a nationally recognized chef, and the title of the 2008 S.Pellegrino Almost Famous Chef.
